The process of measuring a continuous signal (typically air pressure for audio) at discrete, equally-spaced time intervals and recording each measurement as an integer. Sample rate is the number of measurements per second (CD audio: 44,100 Hz). Bit depth is the number of bits per sample (CD: 16 bits = 65,536 levels). Together they determine the fidelity of the digital representation.
